PORK LOIN ROASTED WITH ORANGE AND GINGER

TRENDS IN COOKING indicate that tradition has been all but kicked out of the kitchen in favor of exciting new dishes and flavor combinations like ginger and honey, as shown here in this "Pork Loin Roasted with Orange and Ginger."

Yield: 6 servings

1 loin of pork (4 to 5 pounds)

2 teaspoons salt

Freshly ground pepper

1 cup freshly squeezed orange juice

1/3  cup honey

1 tablespoon ground dried ginger

1/4  teaspoon ground cloves

Preheat the oven to 325 F. Rub the pork roast with salt and pepper to taste, and place fat side up in a roasting pan. Cook 11/2 to 3 hours or until a meat thermometer placed in the flesh of the roast reaches 180 F.

Combine the orange juice, honey, ginger and cloves in a small saucepan and simmer 30 minutes. During the last hour of cooking, brush the roast several times with this mixture to produce a shiny glaze. Serve with rice pilaf or black beans.
